Ingredients
- **Chicken:** Leftover cooked chicken (shredded or diced), or a few chicken thighs/breasts to cook in the broth.

Steps
- 1**Prepare Your Base:** If using raw chicken, add it to a pot with your chosen liquid base and bring to a simmer. Cook until the chicken is done, then remove it, shred or dice it, and set aside. If using leftover cooked chicken, you can skip this step or add it later.
- 2**Sauté Aromatics:** In the same pot (or a new one if you prefer), heat a little oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic, grated ginger, and turmeric. Cook for another minute until fragrant.
- 3**Add Vegetables:** Add any harder vegetables like carrots, celery, potatoes, or sweet potatoes. Sauté for a few minutes to slightly soften them.
- 4**Simmer:** Pour in your broth or liquid base. Bring the soup to a boil, then reduce the heat and simmer until the vegetables are tender, about 15-20 minutes depending on the vegetables used.
- 5**Incorporate Chicken and Greens:** Add the cooked chicken back to the pot. If using quick-cooking vegetables like spinach or kale, add them now and cook until wilted.
- 6**Season and Finish:** Season generously with salt and pepper. Add any dried herbs or spices. If adding noodles or rice, cook them according to package directions, either in the soup or separately.
