Moroccan Lamb and Lentil Harira Soup: A Hearty Meal from Your Pantry

Moroccan Harira soup is a traditional and beloved dish, often served during Ramadan to break the fast, but it's a wonderfully hearty and flavorful meal any time of year. This version features tender lamb and protein-rich lentils, simmered in a fragrant broth infused with tomatoes, spices, and herbs. It’s a complete meal in a bowl, packed with nutrients and satisfying depth of flavor. The beauty of this recipe lies in its ability to transform simple pantry staples into something truly special.

Ingredients:

  • 1 tbsp olive oil
  • 1 lb lamb shoulder, cut into small cubes
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tsp ground ginger
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp ground cinnamon
  • Pinch of cayenne pepper (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 6 cups lamb or beef broth
  • 1 cup brown or green lentils, rinsed
  • 1/2 cup chickpeas, rinsed (canned or pre-cooked)
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste
  • Lemon wedges, for serving

Instructions:

  1. Sear the Lamb: Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the lamb cubes and brown them on all sides. Remove the lamb and set aside.
  2. Sauté Aromatics: Add the chopped onion to the pot and cook until softened, about 5-7 minutes. Stir in the minced garlic, ginger, turmeric, cumin, cinnamon, and cayenne (if using), and cook for another minute until fragrant.
  3. Combine and Simmer: Return the lamb to the pot. Add the crushed tomatoes, broth, rinsed lentils, and rinsed chickpeas. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 1.5 to 2 hours, or until the lamb is very tender and the lentils are cooked through. Stir occasionally.
  4. Add Herbs and Season: Stir in the chopped cilantro and parsley. Season generously with salt and freshly ground black pepper to taste. If the soup is too thick, you can add a little more broth or water.
  5. Serve: Ladle the hot Harira soup into bowls. Serve immediately with fresh lemon wedges on the side for squeezing over the soup. Enjoy this comforting and flavorful Moroccan classic!
