Ingredients
- 1 lb boneless, skinless chicken thighs or breasts
- 8 cups chicken broth
- 1 inch ginger, sliced
- 1 onion, quartered
- 2 star anise
- 1 cinnamon stick
- 4 whole cloves
- 1 tbsp fish sauce
- 1 tsp salt (or to taste)
- 1/2 tsp black pepper
- 8 oz dried pho noodles (or rice noodles)
- Fresh cilantro, chopped
- Fresh basil leaves
- Bean sprouts
- Lime wedges
- Sliced chili peppers (optional)
Steps
- 1**Prepare the Broth:** In a large pot, combine chicken broth, sliced ginger, quartered onion, star anise, cinnamon stick, and cloves. Bring to a boil, then reduce heat and simmer for at least 30 minutes to infuse the flavors. Strain the broth and discard the solids. Return the broth to the pot.
- 2**Cook the Chicken:** Add the chicken pieces to the simmering broth. Cook until the chicken is fully cooked through, about 10-15 minutes depending on the size. Remove the chicken from the broth and set aside to cool slightly. Once cooled, shred or slice the chicken.
- 3**Season the Broth:** Return the broth to a gentle simmer. Stir in fish sauce, salt, and black pepper. Taste and adjust seasoning as needed.
- 4**Cook the Noodles:** While the broth is simmering, cook the pho noodles according to package directions. Drain well.
- 5**Assemble the Pho:** Divide the cooked noodles among serving bowls. Top with the shredded or sliced chicken. Ladle the hot broth over the noodles and chicken.
- 6**Garnish and Serve:** Garnish generously with fresh cilantro, basil leaves, bean sprouts, lime wedges, and sliced chili peppers if desired. Serve immediately and enjoy your homemade Chicken Pho!
