Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 bulb fennel, trimmed, cored, and chopped (reserve some fronds for garnish)

- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional, for a touch of heat)
- 1 (28 ounce) can crushed tomatoes
- 4 cups vegetable broth
- Salt and freshly ground black pepper to taste
- Fresh basil leaves, for garnish
- Crusty bread, for serving
Instructions:
- Sauté Aromatics: Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Add the minced garlic and chopped fennel, and cook for another 5 minutes, stirring occasionally, until the fennel begins to soften.
- Add Spices and Tomatoes: Stir in the dried oregano, dried basil, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Simmer the Soup: Pour in the crushed tomatoes and vegetable broth. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for at least 20 minutes, allowing the flavors to meld. For a smoother soup, you can use an immersion blender to partially or fully blend the soup.
- Season and Serve: Season the soup generously with salt and freshly ground black pepper to taste. Ladle the hot soup into bowls. Garnish with fresh basil leaves and reserved fennel fronds. Serve immediately with crusty bread for dipping.
