Ingredients
  • 2 lbs ripe tomatoes, cored and roughly chopped
  • 1 cucumber, peeled, seeded, and roughly chopped
  • 1 green bell pepper, seeded and roughly chopped
  • 1/2 red onion, roughly chopped
  • 2 cloves garlic, minced
  • 1/4 cup extra virgin olive oil, plus more for drizzling
  • 2 tablespoons sherry vinegar
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 1 slice stale bread (optional, for thickening)
  • 1/2 cup cold water (or more, to reach desired consistency)
Steps
  1. 1**Prepare the Vegetables:** In a large bowl, combine the chopped tomatoes, cucumber, green bell pepper, red onion, and minced garlic.
  2. 2**Blend:** Transfer the vegetable mixture to a blender. Add the olive oil, sherry vinegar, salt, and pepper. If using bread, tear it into pieces and add it to the blender.
  3. 3**Puree:** Blend the ingredients until smooth. You may need to do this in batches depending on the size of your blender. Add cold water gradually until you reach your desired consistency. Some prefer a thicker gazpacho, while others like it thinner.
  4. 4**Strain (Optional):** For an ultra-smooth texture, you can pass the blended soup through a fine-mesh sieve, pressing down on the solids. Discard the solids.
  5. 5**Chill:** Pour the gazpacho into a pitcher or airtight container. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to meld and the soup to chill thoroughly.
  6. 6**Serve:** Ladle the chilled gazpacho into bowls. Garnish with a drizzle of olive oil and finely diced cucumber, bell pepper, onion, or croutons, if desired.
